‘virtual texturing’ is analogous to texturing ‘a la carte’. Instead of loading a single large texture into memory, smaller chunks are loaded dynamically to map a larger object.

Therefore, only the relevant parts of the texture are loaded at any given time. This means faster access times, and as a result, smoother gameplay.
